Gluten Freedom is an endeavor close to our hearts. With many friends and family who suffer from gluten intolerance, we want to provide a stress-free environment of high quality gluten free beer and pizza.

Here’s how we do it:

Eliminating Cross-Contamination

Our kitchens undergo a thorough cleaning to eliminate cross-contamination for every Gluten Freedom event. This includes all surfaces in our kitchen and prep areas as well as the serving trays and pizza ovens.

Our Gluten-Free Dough

Our dough is made with a blend of gluten-free flours that we think creates something as close as possible to true Neapolitan pizza. 

Our pizza crust is made with a blend of Italian and Georgia-grown flours including buckwheat, maize starch, rice starch, and gluten-free wheat starch. 

The flours are combined with water, yeast, and extra virgin olive oil and then undergo a long fermentation. The finished dough is cooked in our wood-fired ovens at 900 degrees resulting in an airy crust and a crispy texture.

Gluten-Free Toppings

All our pizza toppings – from the sauces and cheese, to the vegetables, olive oil and herbs are certified gluten-free.

Gluten Free Beer

We’re committed to serving Gluten Free beer at every Gluten Freedom event, and even having Gluten Free beer available at all times in our taprooms.

• Rice Lager – Introducing our Gluten Free Rice Lager. To make it gluten free, we brewed it with rice malt, millet and buckwheat and gently hopped it with Saaz. This beer is a crisp, crushable rice lager with hints of green tea that’ll have you questioning if it’s really gluten-free. Life is sweet without wheat.

Great care is taken to make sure that our draft beer lines and canning line are thoroughly cleaned and free from cross-contamination when packaging and serving these Gluten Free beers.

We have a broad selection of cocktails and zero-proof cocktails made with gluten-free spirits and gluten-free syrups, herbs and fruits.
